ZOODLES

3 medium courgette

1 tbsp oil

DIRECTIONS

Sautee finely chopped onion, garlic, and celery in a large pan on a high heat. Once browned and softened add the remaining ingredients and seasoning, making sure to stir and combine

Simmer on a low heat for at least 30 minutes, stirring regularly. If the sauce seems too thick at this point at 1tbsp of water and stir

Whilst the beef mixture simmers make your zoodles by using a spiralizer, mandolin, or peeler to cut courgette into ribbons. Alternatively, you can buy pre-spiralized courgette.

Heat the oil in a frying pan and flash fry the zoodles so they are softened, but maintaining some crunch

Transfer zoodles to a bowl and top with the bolognaise
